Jan’s Simple Strawberry Ice Cream


1lb of strawberries or raspberries

4oz of castor sugar

Juice of 1 lemon

½pt of double cream or full fat yogurt


Puree the fruit in a blender (hand held blender will work too) and add the sugar and lemon juice.

If using raspberries, sieve the pips out of the puree.

Stir in the cream and pour into a plastic tub with a lid.

Freeze for an hour, stir and return to freezer.

Once frozen, enjoy it on its own or served with fresh strawberries.
